As part of Skylark's ongoing Dinner on the Beach Series, The Rockhouse Foundation is hosting an unforgettable summer evening on Saturday, June 14th, featuring two celebrated Jamaican chefs and cookbook authors, "The Rousseau Sisters." Michelle and Suzanne have refined their unique concept of Modern Heritage Dining, which is an elevated & distinctly stylish take on the Caribbean's culinary heritage. Guests can expect to enjoy a charming canape & cocktail hour, featuring signature cocktails from Worthy Park and live music, followed by a seated beachfront dinner and a multi-course menu using the best of the island’s produce, much of which will be sourced directly from Rockhouse's hydroponic farm next door. An after party will feature music from renowned DJ Max Glazer, and dancing under the stars.

Evening Schedule: Saturday June 14, 6pm

6:00pm – Sunset Cocktails from Worthy Park rum, wine and canapes at Miss Lily’s Negril at Skylark with entertainment.
7:00pm - Seating begins for Dinner on the Beach with welcome from from Paul Salmon & Peter Rose, chairman and president of Rockhouse Foundation.
7:15pm - The Rousseau Sisters present details on the dinner and food service commences.
9:00pm - Drawing of the Rockhouse Foundation Raffle with Alison Morris Roslyn, celebrating the publishing of her new children's book, Henry the Rockhouse Pelican whose proceeds support the foundation.
9.30 - 11pm - After party at Miss Lily’s at Skylark with DJ Max Glazer

100% of proceeds from ticket sales will benefit the Rockhouse Foundation, our charitable arm dedicated to transforming the places where Jamaica’s children learn, and supporting the great people who teach them.

The Rousseau Sisters

Michelle and Suzanne Rousseau are focused on preserving the stories and culture of Jamaica through the island’s foodways and historic venues. As sisters, restaurateurs, television personalities and award-winning cookbook authors, they have carved a special place for themselves in the culture as authorities on Caribbean cuisine and heritage. As founders of luxury hospitality and consulting brand, "Two Sisters" they gained renown for their impeccable restoration of Harmony Hall, a heritage site in St. Mary, which housed The Sisters’ beloved dining concept: Summerhouse, offering modern Caribbean cuisine.

Suzanne and Michelle continue to celebrate and evolve Caribbean culture through sustainable hospitality and heritage preservation, including creating a first-of-its-kind collection of culinary journeys launching in late spring 2025. Their acclaimed works include Caribbean Potluck (NPR's Best Books 2014) and Provisions: The Roots of Caribbean Cooking (listed among the best cookbooks of 2018 by The San Francisco Chronicle, The New Yorker, Epicurious and Serious Eats).

Chef Andre Fowles
Kingston-born Chef Andre Fowles draws his culinary roots from the vibrant, soulful cooking of his grandmother—meals rich in heart, heritage, and bold Jamaican flavors. A graduate of the Culinary Institute of America, he honed his craft in top island kitchens like Mac’s Chop House and the legendary Round Hill Hotel, before making his mark in New York City as chef de cuisine at Miss Lily’s. His modern Caribbean approach has earned him features at the prestigious James Beard House, on the Today Show, and in The New York Times. Currently, he serves as culinary director of Miss Lily’s in Negril and personal chef to musician Bruce Springsteen. A three-time Chopped champion and Grand Championship finalist, Andre has also taken on Beat Bobby Flay. He is now writing his first cookbook, slated for release in 2026.

About Rockhouse Foundation
The Rockhouse Foundation is dedicated to transforming the places where Jamaica’s children learn while supporting the great people who teach them, directly impacting the lives of thousands of young people and their families. Since its inception in 2004, the Foundation has invested over $10 million USD to build, expand and renovate six Negril area public schools and the Negril Community Library. In 2017, the Rockhouse Foundation established Jamaica’s first public institution serving children with disabilities and without in a full inclusion setting – the Savanna-la-Mar Inclusive Academy (Sav Inclusive), which was also the first school built from the ground up by the Foundation. Jamaica’s Ministry of Education and the Rockhouse Foundation have signed a new joint commitment to expand the school through to 12th grade over the next decade. All administrative and marketing costs of the foundation are underwritten by Rockhouse Hotel, Skylark Negril Beach Resort, Miss Lily’s and their owners, meaning all donations go directly to the projects and programs. Alison Morris Roslyn & Henry the Rockhouse Pelican

Drawing the raffle at the dinner is journalist and former news anchor, Alison Morris Roslyn, who is celebrating the launch publishing of her new children's book, Henry the Rockhouse Pelican, with proceeds benefitting the Rockhouse Foundation. Henry The Rockhouse Pelican is based on a true story that yoga instructor Fanette Johnson shared with Alison Morris Roslyn after a beautiful yoga class by the sea at Rockhouse. It’s about family, friends and overcoming your fears. Fly along with Henry as the young pelican soars over the waters of Negril, Jamaica and learns about the wisdom of elders, the kindness of acquaintances, and the strength we all have inside.
