Our annual Dinner on the Beach returns this June but twice as big, with two unforgettable dinners instead of one. Rockhouse & Skylark join forces for an entire weekend of food festivities to celebrate Rockhouse Restaurant’s new culinary directors, Michelle and Suzanne Rousseau, and the amazing work of the Rockhouse Foundation, which transforms the places Jamaican children learn. 100% of proceeds from ticket sales benefit the Rockhouse Foundation.

Join us around the table for a full weekend of festivities:

  • Friday morning (6/5) – The Rockhouse Foundation School Tour & Farm Visit for a transformative trip to the first school built by the Foundation, and an inside look at our hotel’s organic farm. Purchase of the weekend package gains you access to the tours, with round trip transportation included, from both Rockhouse and Skylark
  • Friday Dinner (6/5) – On the Cliffs at Rockhouse with the Rousseau Sisters, who will debut a selection of dishes as Rockhouse's newest Culinary Directors. This is an exclusive first look at a menu that reimagines Jamaican cuisine through a modern coastal lens. Each ticket includes cocktail hour with drinks, canapés and music, leading into a four-course dinner, cliffside at Rockhouse Restaurant.
  • Saturday afternoon (6/6) – Book Talk & Signing with Chef Andre celebrating the release of his new cookbook, My Jamaican Table. An intimate fireside chat moderated by a special guest on Andre's culinary journey, his deep roots in Jamaican cooking, and the stories behind the recipes. Purchase of the weekend package gains you access to the book talk. Books will be available for purchase.
  • Saturday Dinner (6/6) – On the Beach at Skylark with Michelin Guide’s 2025 Young Chef, India Doris of Markette in New York City, hosted by Skylark’s culinary director, Andre Fowles. Each ticket includes welcome drinks (beer, wine and cocktails), raw bar, and live music, followed by a multi-course dinner on the beach and access to the After Party at Miss Lily’s. The evening’s schedule is as follows:
    • 6pm - Sunset drinks, canapés, raw bar, and live entertainment
    • 7pm - Seating begins for Dinner on the Beach, with a welcome from the Rockhouse Foundation
    • 9pm - Rockhouse Foundation raffle drawing
    • 9:30-11pm - After Party at Miss Lily's with DJ Max Glazer

The Rousseau Sisters
Culinary Directors @ Rockhouse Restaurant

Michelle and Suzanne Rousseau are the new culinary directors of Rockhouse Restaurant, focused on preserving the stories and culture of Jamaica through the island's foodways and historic venues. As chefs, restaurateurs, cookbook authors, and television personalities, they have established themselves as leading authorities on Caribbean cuisine and heritage. As founders of Two Sisters Jamaica, they gained renown for their impeccable restoration of Harmony Hall, a heritage site in St. Mary, which housed their beloved dining concept Summerhouse, offering modern Caribbean cuisine. Their acclaimed works include Caribbean Potluck (NPR's Best Books 2014) and Provisions: The Roots of Caribbean Cooking. Starting this June, the Rousseau Sisters look forward to bringing their signature elevated yet approachable style to Rockhouse Restaurant: distinctly Caribbean, with Mediterranean influences, and rooted in the flavors, spices, and ingredients of Jamaica.

Andre Fowles
Culinary Director @ Miss Lily's Negril

Chef Andre Fowles is a Jamaican-born chef, three-time Food Network Chopped champion, and author of My Jamaican Table, his debut cookbook, published to critical acclaim in March 2026. Renowned for his bold, contemporary approach to Caribbean cuisine, Andre has been spotlighted by StarChefs New York and featured in The New York Times, Bon Appétit, Thrillist, VICE, Good Morning America, and the Today show. Andre has hosted multiple dinners at the prestigious James Beard House and participated in leading food festivals across the United States and the Caribbean, including Food & Wine, SOBEWFF, The Family Reunion, and the Jamaica Observer Food Awards. He serves as culinary director of Miss Lily's in Negril, ambassador of the Rockhouse Foundation, and personal chef to musician Bruce Springsteen

India Doris
Executive Chef and Co-Owner @ Markette and The Argyle (NYC)

India Doris is the Co-Owner and Executive Chef of Markette, the modern European restaurant in Chelsea, and The Argyle, the cocktail lounge located directly below. This past fall, she received the Young Chef Award at the 2025 Northeast MICHELIN ceremony, a top honor recognizing exceptional emerging culinary talent. Originally from London, India has cooked throughout Europe at acclaimed restaurants in Spain, France, and the UK, including La Trompette and Bibendum at the Michelin House, and spent time studying butchery in Scotland. Upon settling in New York City over a decade ago, she worked as Chef de Partie at The NoMad before joining Chef James Kent at the MICHELIN-starred Crown Shy and later rising to Executive Sous Chef at two MICHELIN-starred SAGA. At Markette, India's seasonally-rotating menu is shaped by her time in Europe, her upbringing in the UK, and her Caribbean heritage.

About the Rockhouse Foundation

The Rockhouse Foundation is dedicated to transforming the places where Jamaica’s children learn while supporting the great people who teach them, directly impacting the lives of thousands of young people and their families. Since its inception in 2004, the Foundation has invested over $11 million USD to build, expand and renovate six Negril area public schools and the Negril Community Library. In 2017, the Rockhouse Foundation established Jamaica’s first public institution serving children with disabilities and without in a full inclusion setting – the Savanna-la-Mar Inclusive Academy (Sav Inclusive), which was also the first school built from the ground up by the Foundation. Jamaica’s Ministry of Education and the Rockhouse Foundation have signed a new joint commitment to expand the school through to 12th grade over the next decade. All administrative and marketing costs of the foundation are underwritten by Rockhouse Hotel, Skylark Negril Beach Resort, Miss Lily’s and their owners, meaning all donations go directly to the projects and programs. The Rockhouse Foundation directly impacts the lives of thousands of young people, their families and their educators in western Jamaica.
